I created this handout over fifteen years ago; it has had numerous revisions and updates. Ironically, I was diagnosed with celiac disease in 2016. I used my own handout and progressed through the steps:

  • Step 1– Learn the basics. Realize that these big diet and lifestyle changes will not happen overnight.
  • Step 2– Find more of the hidden sources of gluten in your diet. Stretch yourself to make or try new GF foods.
  • Step 3– Maintenance

    This is an informative resource with several hyperlinks to external references. However, I didn’t find it very user friendly as a handout for my particular population–older adults who generally need larger font, pictures, double-spaced lines, and who don’t frequently use the computer/internet daily. I will probably use this as a guide for ME as I coach newly diagnosed celiac clients. I will definitely use this vendor’s other products– Gluten Free Name Brand Foods and Low FODMAP Brand Name Foods as client handouts.
